Houston-grown Dish Society debuts in Mueller, adding a Texas-sourced, fast-casual option for neighbors
Dish Society opened its first Austin location on Dec. 21 at 1900 Aldrich Street, Suite 130, bringing a farm-to-table, fast-casual format to Mueller. According to Dish Society, the 3,600-square-foot space seats 160 guests, split evenly between indoor and patio seating, and includes a walkup window.
Why Mueller
Owner Aaron Lyons is an Austin native and University of Texas graduate, and the company cites Mueller’s mix of residents, offices, and park spaces as a fit for a neighborhood-centric concept. “It’s kind of surreal to come full circle,” said owner Aaron Lyons. “Being able to share Dish Society with my family and friends is pretty cool. Quite a few people on our team are from Austin or went to UT and also have friends and family they’re excited to share the brand with. But starting in a new market with a concept that’s not a first draft is also a nice feeling. Since we’ve been doing this for almost ten years, we have the opportunity to make a pretty good impression.” CultureMap Austin
Leadership and company ties
Lyons leads the brand with COO Trent Patterson under the Five 12 Restaurant Concepts umbrella, which also operates sister concept Daily Gather, according to Dish Society. Lyons and Patterson are UT alumni. Culinary direction runs through Five 12 culinary director Brandi Key, who framed the Austin launch as a chance to build relationships with regional producers. “Knowing Aaron and Trent's ties to this city, it was exciting for me to join this company with the promise that we’d bring our passion for exceptional experiences and hospitality to this,” said Brandi Key, Five 12 culinary director. “As a chef, I am thrilled to widen our portfolio of local vendors. Supporting local will always be a focus for us, and coming into this new market means we get to work with new produce and specialty companies. Over the coming months, we’ll add to the list and I can't wait to meet more potential partners to collaborate in providing our take on fresh, seasonal dishes for our guests.” CultureMap Austin
What’s on the menu
The restaurant serves an all-day Southern-style brunch alongside sandwiches, grain bowls, tacos, and desserts such as root beer floats. The format is counter service with table delivery. Over 75% of ingredients are sourced from Texas producers, according to Dish Society.
Recognizable suppliers include:
- Open Eye Chai
- Buddha’s Brew Kombucha
- Lick Honest Ice Creams
- Yellow Bird Sauce
- Joe’s Microgreens
- Lone Star Lettuce Growers
- Fiesta Tortilla Factory
Local sourcing upsides and trade-offs
Dish Society’s sourcing approach aligns with consumer interest in provenance and shorter supply chains. Industry analysis notes that local sourcing can improve freshness and strengthen ties with regional vendors, but it can also raise procurement costs and introduce seasonal variability that affects menus and margins, according to The Cassidy. Operators manage those factors through diversified vendors, seasonal planning, and forecasting.
Staffing and community commitments
The Mueller location is hiring about 40 employees, with the company highlighting tuition and leadership support, paid volunteer hours, exercise and wellness initiatives, and paid time off for hourly staff, according to Dish Society. Family-focused programming includes kids-eat-free Tuesdays. The company also plans community events at the site.
Hours and services
Dish Society lists the following operating hours and services for Mueller:
- Sunday–Thursday: 7 a.m.–9 p.m.
- Friday–Saturday: 7 a.m.–10 p.m.
- Online ordering and catering available
Details are posted by Dish Society.
How the market sets the stage
Austin counted 961,855 residents in the 2020 census, with the metro area at about 2.55 million people and a 2023 gross domestic product of $248 billion, reports Wikipedia. That scale supports a steady slate of new openings and a mix of formats in neighborhoods like Mueller.
Broader category trends also favor fast-casual operators that pair convenience with higher-quality sourcing and menu customization. The U.S. fast-casual restaurants market is projected to grow by $84.5 billion from 2025 to 2029, driven by menu innovation and customization, according to PR Newswire. Dish Society’s online ordering and catering options match those service trends, the company notes on Dish Society.
Development and labor outlook
External conditions can shape neighborhood restaurant performance. Recent reporting shows a decline in multifamily housing permits in Austin, a trend that could affect future customer density and labor pools if it continues, according to Axios. Operators in growth corridors often watch housing and population changes when planning staffing and promotions.
What Mueller diners can expect now
The new location adds an all-day brunch and Texas-sourced menu to Mueller with counter service, patio seating, and a walkup window. The company’s hiring and benefits plan, and regular family programming, suggest sustained activity beyond the opening week. For residents and workers in the Aldrich Street district, the format offers another option for breakfast through dinner. Read the press release on austin.culturemap.com.
